Ingredients
Serves: 4- 2 tablespoons olive oil
- 1 cup chopped onion
- 1 cup chopped tomato
- 1/2 cup chopped celery
- 4 garlic cloves, minced
- 1 (8 ounce) bottle lager beer
- 2 pounds mussels, debearded
- 1/3 cup heavy cream
- 1/2 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
- 1/3 cup fresh chopped parsley
Preparation method
Prep: 15 mins | Cook: 15 mins1. Pour oil into a soup pot and place over medium-high heat. Cook onion, tomato, celery, and garlic in hot oil for about 5 minutes, then add beer.
2. When beer comes to a boil, dump in the mussels. Cover and simmer for 5 minutes, or until mussels open.
3. Place mussels in a bowl, reserving broth. Stir cream, salt, and pepper into the broth; when mixture comes to a boil, simmer for 1 minute, then add parsley. Pour over mussels to serve.
