Mussel tapas recipe details
Ingredients
12 large | Spanish mussels |
250 ml | dry white wine |
1 bunch(es) | parsley, chopped |
1 large | tomato, peeled, seeded, chopped |
1 | green pepper, seeded, cubed |
1 medium | onion, chopped |
2 clove(s) | garlic, finely chopped |
5 tbsp | virgin olive oil |
2 tbsp | lemon juice |
crushed ice, for decoration, optional |
Instructions
Brush and clean mussels well.Bring wine, some sprigs of parsley and mussels to boil, let mussels open, and take them out. Reduce wine to a spoonful. Discard parsley sprigs.
For the dressing, mix wine reduction with olive oil and lemon juice, put aside, and let everything cool.
For the vegetable salsa combine the cooled dressing with the chopped vegetables and seasonings: tomato, pepper, onion, garlic and parsley.
Put mussels in one half of shell, and place, if possible, on crushed ice. Place a teaspoon of the vegetable salsa on each mussel.
Serving suggestions:Serve with fresh baguette and alioli.
