Ingredients
4 large | portobello mushrooms |
1 | eggplant |
1 | zucchini |
2 | tomatoes |
1 | Mozzarella cheese |
mixed Italian herbs | |
salt and pepper | |
50 g | grated cheese |
some | oil spray |
Instructions
Brush the mushrooms carefully; do not soak them in water!Slice the zucchini and eggplant and fry in sprayed pan until cooked. Slice the tomatoes and also slice the Mozzarella. Grease an oven proof dish and place the mushrooms into it. Now layer the vegetables onto the mushrooms like: tomato, eggplant, Mozzarella, zucchini, tomato, eggplant and so on. Season each layer. Sprinkle grated cheese on top and bake at 180°C for 30 minutes.
You can serve this as a starter or as a side dish with some meat.
