Mushroom soup recipe details
Ingredients
250 g | mushrooms, sliced |
150 g | potatoes, peeled and diced |
30 g | butter |
100 g | crème fraîche |
salt and freshly ground black pepper | |
1 tsp | parsley, chopped |
1 l | water |
some | instant stock |
Instructions
Cook the potatoes in salted water until done. Drain.In a saucepan, heat the butter and sauté the mushrooms. Pour in the water and add the potatoes and the instant stock. Bring to a boil. Purée the soup, then stir in the creme fraiche and bring to a short boil again. Season to taste with salt and pepper. Simmer for 3 minutes.
Serve sprinkled with parsley.
