Mushroom pepper omelet recipe details
A tasty cheese omelet for beginning breakfast cooks. You cook the veggies separately so they aren’t crunchy.

Ingredients
Serves: 2- 1/4 cup chopped green onions
- 1/4 cup sliced fresh mushrooms
- 1/4 cup chopped green pepper
- 2 tablespoons butter, divided
- 5 eggs
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup shredded cheddar cheese
- 1/4 cup shredded Monterey Jack cheese
Preparation method
Prep: 10 mins | Cook: 20 mins1. Melt 1 tablespoon butter in a skillet over medium heat. Cook onions, mushrooms, and green pepper in the melted butter for about 8 minutes, then transfer to a plate and cover with foil.
2. Add another tablespoon of butter to the skillet and melt over medium-high heat. In a small bowl, beat eggs with salt and pepper. Pour into hot skillet, and do not stir, allowing the mixture to set.
3. Your aim is to make a flat circle of egg mixture in the skillet. As the edge of the circle sets, lift it up with a rubber spatula and tilt the skillet so the raw egg runs under the cooked portion for better contact with the hot skillet.
4. When the eggs are all cooked, pour the sauteed vegetables on one side of the circle and the cheese on top of the vegetables. Fold the other half of the circle on top. Cut in half to serve.
