Mushroom muffins recipe details
Ingredients
1 tbsp | vegetable oil |
175 g | button mushrooms or small white mushrooms, cleaned and sliced |
175 g | plain flour |
2 tsp | baking powder |
1 pinch(es) | salt |
125 ml | milk |
50 g | butter, melted |
1 large | egg |
1 tsp | fresh sage, chopped |
3 tbsp | Parmesan cheese, freshly grated |
Instructions
Preheat oven to Gas Mark 6, 200ºC, 400ºF. Place paper muffin cases into a 6-hole muffin tin.Heat a medium frying pan and add the oil. Set to a low-medium heat and sauté the mushrooms until soft, about 4-5 minutes. Drain excess oil and set aside until required.
Sift the flour, baking powder and salt into a bowl.
Beat the egg into the milk and add the melted butter. Whisk together and pour into the flour mixture. Quickly mix together until there is no obvious dry flour remaining. Any small to medium lumps may be ignored. Quickly mix in the cheese, mushrooms and sage and divide the mixture between the muffin cases.
Bake for about 25 minutes until well risen and golden and they feel springy to the touch when lightly pressed with a finger. Allow to cool for 10 minutes and then transfer to a wire rack to cool further.
Serve slightly warm, or cold if wished.
