Mushroom crust quiche recipe details
- Ingredients:
- 1 pound mushrooms, coarsely chopped
- 1 sick butter or margarine
- 1 cup finely crushed saltine crackers
- 1-1/2 cups of chopped green onions
- 1 pound shredded jack or Swiss cheese
- 2 cups small- or large-curd cottage cheese
- 6 eggs
- 1/2 teaspoon each cayenne and paprika
Saute mushrooms in 1/2 of the butter until limp. Stir in crushed crackers, then turn into a well-greased 11 x 13-inch pan. Press mushroom mixture evenly over pan bottom.
Melt remaining butter, add onions, and saute until limp. Spread onions over crust; sprinkle evenly with the cheese. In a blender, whirl the cottage cheese, eggs, and cayenne until smooth. Pour into crust and sprinkle with paprika.
Bake in a 350-degree oven until a knife inserted in the center comes out clean, about 55 to 60 minutes. Let stand 10 to 15 minutes before cutting. For 1/2 the recipe, use a 9-inch pie pan and bake for 20 to 25 minutes.
