Multicoloured pepper sauce for steaks recipe details
Ingredients
1 | onion, chopped |
1 tsp | canned green peppercorns |
1 tsp | black peppercorns |
1 tsp | pink pepper berries |
200 g | single cream |
3 tbsp | dry vermouth |
2 tbsp | flour |
3 tbsp | butter |
400 ml | beef stock |
salt and pepper |
Instructions
Knead the butter with the flour until well combined. Drain the green peppercorns. Crush the black pepper.In a pan melt the remaining butter. sautee the onion until lucent. Stir in the green, black and pink pepper. Pour in the cream and the stock and bring to a boil. Add the flour and butter mixture and cook for 5-10 minutes, stirring frequently. Season to taste with salt, pepper and Vermouth.
Goes well with seared beef tenderloin.
