I’ve eaten a lot of different kinds of meatloaf, and I’ve experimented until I settled on this one.

Ingredients
Serves: 9- Meatloaf:
- 1 onion, diced
- 1/2 cup diced green pepper
- 2 eggs
- 1 cup uncooked oatmeal
- 1/2 cup milk
- 2/3 cup ketchup
- 2 tablespoons Worcestershire sauce
- 1 teaspoon brown sugar
- salt and ground black pepper to taste
- 1 tablespoon minced garlic
- 2 pounds lean ground beef
- Glaze:
- 1/2 cup ketchup
- 2 tablespoons Worcestershire sauce
- 1/2 teaspoon brown sugar
Preparation method
Prep: 20 mins | Cook: 1 hour 30 mins | Extra time: 5 mins1. Preheat oven to 350 degrees F (175 degrees C). Line 9×5 inch loaf pan with aluminum foil.
2. In a large mixing bowl, add all meatloaf ingredients except ground meat, mix well. Add ground beef and mix until well blended. Put ground beef mixture in loaf pan, pressing into pan to form a loaf. Cover tightly with aluminum foil, place pan on a baking sheet and bake for 1 and 1/2 hours. Mix glaze ingredients in a small bowl and set aside.
3. Carefully remove from oven, fold back one corner of the foil and drain any juices. Remove foil cover and carefully remove meatloaf from pan by lifting the aluminum foil out of the loaf pan. Place on the baking sheet, spread out the aluminum foil and spread glaze over the meatloaf. Return to the oven for an additional 15 minutes. Remove from oven and transfer to a serving platter.
