Mousse au chocolate and cowberry cake recipe details
Ingredients
For the sponge: | |
2 | eggs |
75 g | sugar |
1 tsp | vanilla extract |
75 g | flour |
1 tsp | baking powder |
For the topping: | |
1 glass(es) | cowberries, 400 g |
500 g | mousse au chocolate |
25 g | white chocolate flakes |
Instructions
Preheat the oven to 180°C.Whisk the eggs until creamy, trickle in the sugar and the vanilla extract and mix well. Combine the flour and the baking powder, sieve on top of the egg mixture and mix in. Spoon the dough in a bottom-lined springform tin and flatten.
Bake in the preheated oven for 25 minutes. Remove from the springform tin, transfer to a wire rack and let cool. Transfer on a cake plate and put a cake setting ring around.
Set 2 tablespoons of the cowberries aside for garnishing. Evenly divide the remaining berries on the cake, but leave 1 cm free around the edges. Evenly divide the mousse au chocolat on top of the cowberries and flatten with a tablespoon. Keep cool for at least 3 hours.
Garnish with the white chocolate flakes and the remaining cowberries. Remove the cake setting ring and serve.
