Morrocan flat bread dip recipe details
Ingredients
2 medium | eggplants, peeled, chopped |
4 clove(s) | garlic, minced |
4 | tomatoes, blanched, chopped |
5 tbsp | olive oil |
½ tsp | paprika |
½ tsp | cumin |
1 tbsp | parsley, chopped |
salt and pepper, to taste |
Instructions
Peel and chop eggplants. Sprinkle with minced garlic and poach in a pan over low heat. Drain and set aside.Cook tomatoes in a pan with oil, cumin, paprika, salt and pepper. Once sauce has reduced a little, add parsley and eggplant cubes. Stir. Process mixture in a blender until smooth or crush it with a wooden spatula.
Serve warm together with some bread or fresh vegetables.
