Ingredients

2 medium eggplants, peeled, chopped
4 clove(s) garlic, minced
4  tomatoes, blanched, chopped
5 tbsp olive oil
½ tsp paprika
½ tsp cumin
1 tbsp parsley, chopped
salt and pepper, to taste

Instructions

Peel and chop eggplants. Sprinkle with minced garlic and poach in a pan over low heat. Drain and set aside.

Cook tomatoes in a pan with oil, cumin, paprika, salt and pepper. Once sauce has reduced a little, add parsley and eggplant cubes. Stir. Process mixture in a blender until smooth or crush it with a wooden spatula.

Serve warm together with some bread or fresh vegetables.
