Ingredients
Serves: 4- 1 1/3 pounds chicken, diced
- 2 tablespoons Gourmet Garden Fresh Blends Moroccan(TM)
- 1 tablespoon olive oil
- 1 tablespoon lemon rind
- 3 tablespoons lemon juice
- 8 wooden skewers, soaked in water
- 1 1/3 cup couscous
- 1 1/3 cup boiling water
- 5 ounces quartered cherry tomatoes
- 2 green onions, thinly sliced
- 1 cup chopped watercress
- 3 ounces toasted pine nuts
Preparation method
Prep: 15 mins | Cook: 15 mins1. Coat diced chicken with Gourmet Garden Fresh Blends Moroccan(TM), olive oil, lemon rind, and 1 tablespoon lemon juice. Thread chicken onto 8 skewers.
2. Combine couscous with boiling water in a large heatproof bowl, cover and stand 5 minutes.
3. Add remaining lemon juice, cherry tomatoes, green onions, chopped watercress and pine nuts to couscous. Stir to combine.
4. Heat frying pan over medium-high heat. Add skewers. Cook for 3 to 4 minutes each side or until cooked through. Serve with couscous.
