Mom's escarole and beans recipe details
This is my mom’s recipe for Escarole and Bean soup…we call it ‘Shkadole and beans.’ The garlic and pepperoni give it a wonderful taste.

Ingredients
Serves: 10- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 stick pepperoni, cut into chunks
- 2 heads escarole, chopped
- 2 quarts chicken broth
- 2 (15 ounce) cans white beans
Preparation method
Prep: 15 mins | Cook: 30 mins1. Saute finely chopped garlic in the olive oil. Fry chunked pepperoni in the oil.
2. Stir in escarole and fry in the oil until it wilts.
3. Add chicken broth and beans and bring to a boil. Lower heat and simmer for approximately 15-20 minutes.
