Mocha tray bake recipe details
Ingredients
For the chocolate sponge: | |
230 g | butter |
230 g | castor sugar |
4 medium | eggs, beaten |
230 g | flour |
2 tbsp | cocoa |
2 tsp | baking powder |
For the Icing: | |
60 g | butter |
1 tbsp | strong espresso |
1 tbsp | Tia Maria |
180 g | icing sugar |
Instructions
Cream together butter and sugar. Fold in beaten eggs.In a separate bowl mix together the flour, cocoa and baking powder. Combine with the egg mixture and mix well.
Pour batter into a greased 20x30cm tin, and bake for 30 minutes at 150°C.
Icing:
Combine butter with warm espresso and Tia Maria. Add icing sugar and mix until smooth and creamy.
Spread icing over the cake, and cut into squares when cooled.
