Ingredients

75 ml	castor sugar
125 ml	instant coffee powder
500 ml	fresh cream
125 ml	Old Brown sherry
200 g	ginger biscuits
	gold and silver balls to decorate

Instructions

Beat together the sugar, coffee powder and cream until stiff. If your instant coffee is granulated, first crush to a fine powder.

Pour the sherry into a saucer. Dip the cookies in the sherry one by one.

Sandwich the cookies together with a little whipped cream mixture and arrange them in a long roll on a plate.

Cover the outside of the roll with the remaining cream. Draw lines with a fork so the dessert resembles a log and decorate with silver and gold balls.
