|2 tbsp||lime juice|
|4 sprig(s)||mint, chopped|
|salt and pepper|
|1 stalks||leek, sliced|
|1||red bell pepper, sliced|
|200 g||carrots, sliced|
|4 stalks||celery, sliced|
InstructionsIn a bowl, mix together the mint, yoghurt and lime juice. Season to taste with salt and honey.
In a pan, heat half of the oil. Fry the broccoli over low heat for 2 minutes. Stir in the carrots, celery and 1 tablespoon of oil. Fry for 3 more minutes. Stir in the bell pepper, leek, cucumber and the remaining oil. Fry for 2-3 more minutes. Season with salt and pepper.
Serve the vegetables with the mint yoghurt.
