Mixed vegetables with lime yoghurt recipe details
Ingredients
2 tbsp | lime juice |
4 sprig(s) | mint, chopped |
400 g | yoghurt |
salt and pepper | |
1 tsp | honey |
1 stalks | leek, sliced |
200 g | broccoli |
1 | red bell pepper, sliced |
200 g | carrots, sliced |
4 stalks | celery, sliced |
½ | cucumber, sliced |
4 tbsp | oil |
Instructions
In a bowl, mix together the mint, yoghurt and lime juice. Season to taste with salt and honey.In a pan, heat half of the oil. Fry the broccoli over low heat for 2 minutes. Stir in the carrots, celery and 1 tablespoon of oil. Fry for 3 more minutes. Stir in the bell pepper, leek, cucumber and the remaining oil. Fry for 2-3 more minutes. Season with salt and pepper.
Serve the vegetables with the mint yoghurt.
