Ingredients

1	onion
1 small	courgette
1	aubergine
2	bell peppers
2 handful	button mushrooms
2 clove(s)	garlic
3	tomatoes
4	eggs
4 slice(s)	Cheddar cheese
1 tbsp	olive oil
	salt and pepper
	paprika
	thyme

Instructions

Cut all vegetables in small pieces.

Heat oil in a large frying pan and fry the vegetables until tender but still a bit firm to the bite. Season with salt, pepper and thyme.

Make 4 wells in the vegetable mixture. Crack an egg into each well. Dust with a little paprika powder and cover each egg with a slice of cheese. Cover the pan with a lid and cook over low heat until the eggs are set.
