Mixed vegetables with eggs and cheese recipe details
Ingredients

1 small | courgette |
1 | aubergine |
2 | bell peppers |
2 handful | button mushrooms |
2 clove(s) | garlic |
3 | tomatoes |
4 | eggs |
4 slice(s) | Cheddar cheese |
1 tbsp | olive oil |
salt and pepper | |
paprika | |
thyme |
Instructions
Cut all vegetables in small pieces.Heat oil in a large frying pan and fry the vegetables until tender but still a bit firm to the bite. Season with salt, pepper and thyme.
Make 4 wells in the vegetable mixture. Crack an egg into each well. Dust with a little paprika powder and cover each egg with a slice of cheese. Cover the pan with a lid and cook over low heat until the eggs are set.
