Mixed vegetables with couscous recipe details
Ingredients
250 g | couscous |
600 ml | vegetable stock |
1 tsp | dried mint, powdered |
4 tbsp | pine nuts, toasted |
1 | red onion, chopped |
1 | zucchini, trimmed, lengthwise halved and sliced |
2 | carrots, thinly sliced |
1 large | bell pepper, chopped |
1 small | cauliflower, in florets |
2 tbsp | olive oil |
50 | golden raisins |
1 ½ tsp | ground cumin |
½ tsp | dried thyme |
15 tsp | ground coriander |
100 ml | dry white wine |
salt and pepper |
Instructions
Combine couscous and mint, add 500ml of the hot vegetable stock and let soak.In a large frying pan, heat oil and fry the onions until translucent. Add carrots, cauliflower, zucchini, and bell pepper and cook, stirring frequently, for 5 minutes. Add raisins and herbs and deglaze with the white wine. Cook until the liquid has evaporated. Add approximately 100ml of the vegetable stock, season with salt and pepper, cover and cook over low heat for another 5 minutes. Check seasoning and adjust if necessary.
Sprinkle with the toasted pine nuts and serve with the couscous.
