Mixed fruit and nut bread recipe details
This is a cake-like bread I recently developed that has become a family favorite. It is wonderful with a cup of java and is also a great snack or even served as a desert a la mode.

Ingredients
Serves: 10- 2 1/2 cups all purpose flour
- 1 tablespoon canola oil
- 2 medium eggs
- 1/2 cup sugar or Splenda
- 1/2 cup mashed banana or diced apple
- 1/2 cup applesauce
- 8 ounce mixed berry lowfat yogurt
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon nutmeg
- 1/2 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1/2 cup raisins
- 3/4 cups walnut pieces
Preparation method
Prep: 10 mins | Cook: 2 hours1. Place all ingredients in your bread machine pan and use the cake (or quick bread) and light crust (if available) settings. I generally use a nonstick spatula to scrape the sides of the pan after 5-10 minutes to ensure good mixing.
