Ingredients
Serves: 6- 1 cup green beans, chopped into bite-size pieces
- 1 cup yellow beans, chopped into bite-size pieces
- 3/4 cup drained and rinsed canned red kidney beans
- 1 cup cherry tomatoes, sliced
- 1 large red onion, finely sliced
- 1/2 cup finely chopped fresh flat-leaf parsley
- Salt and freshly ground black pepper
- Spicy Cream Dressing
- 1 clove garlic, roughly chopped
- 1/4 teaspoon salt
- 4 tablespoons crème fraîche or light sour cream
- 2 teaspoons tomato paste
- 1 tablespoon olive oil
- 2 tablespoons balsamic vinegar
- Freshly ground black pepper
- Pinch of sugar
- 1 to 2 pinches of cayenne pepper
Preparation method
Prep: 15 mins | Cook: 12 mins1. Combine green and yellow beans in a steamer and steam, covered, for about 12 to 15 minutes. Allow to cool.
2. While beans are cooking, smash the garlic clove into a paste using the flat side of your knife or a mortar and pestle. Add salt, creme fraiche, tomato paste, olive oil, vinegar, black pepper, sugar, and cayenne. Stir well to combine.
3. In your serving bowl, toss the cooked beans, kidney beans, tomatoes, onion, parsley, salt, and pepper together. Serve dressing in a small bowl on the side so each person can dress their own bean salad.
