Ingredients

2.5 kg leg of lamb, boned
  For the marinade:
120 ml olive oil
120 ml dry red wine
20 g fresh mint, minced
2  bay leaves, crumbled
4 clove(s) garlic, minced


Instructions

Mix all the ingredients for the marinade in a large glass baking dish. Add lamb, turning to coat. Cover and refrigerate overnight.

Preheat oven to 200°C.

Drain lamb and transfer to a large roasting pan. Arrange fat side down in pan and roast for 15 minutes. Reduce oven temperature to 170°C and continue roasting for about 30 minutes. Remove from oven and let stand 10 minutes. To serve, cut into slices.
