For the marinade: |

Instructions
Mix all the ingredients for the marinade in a large glass baking dish. Add lamb, turning to coat. Cover and refrigerate overnight.Preheat oven to 200°C.
Drain lamb and transfer to a large roasting pan. Arrange fat side down in pan and roast for 15 minutes. Reduce oven temperature to 170°C and continue roasting for about 30 minutes. Remove from oven and let stand 10 minutes. To serve, cut into slices.
