Mint and onion bruschetta recipe details
A recipe born as a way to make use out of leftover onions has blossomed and evolved into this clean-finishing new classic.

Ingredients
Serves: 6- 1 medium-sized red onion, chopped
- 4 cloves garlic, minced
- 1/8-1/4 cup minced or chopped mint
- 2 tablespoons olive oil
- 2 tablespoons vinegar
- salt and pepper to taste
- dried oregano, parsley, and thyme to taste?
- 1 loaf French or Italian bread
- 1/2 cup Gorgonzola / crumbly cheese
Preparation method
Prep: 3 mins | Cook: 10 mins1. Chop onions and garlic and add to large non-reactive bowl. Mix in mint, oil, vinegar, additional seasonings to taste, and salt and pepper to taste. Cover and refrigerate until usage.
2. Take loaf and cut on the bias into 1-inch pieces. Lightly brush with olive oil and broil until golden brown on top, about, 2-3 minutes. Use a fork to top the breads (while still warm) with the onion mixture, and Gorgonzola cheese. Garnish with additional mint, if desired.
