Minestrone soup recipe details
- Ingredients
- 2 medium onions, chopped
- 3 cloves garlic, minced
- 4 Tablespoons vegetable oil
- 2 slices bacon, chopped
- 1/2 teaspoon thyme
- 1/2 teaspoon dried basil
- 4 tomatoes, chopped
- 1/2 cup apple juice
- 4 cups water
- 2 cup tomato puree
- 2 cups carrots, chopped
- 1 cup broccoli florets
- 1 cup pasta (tortellini is good)
- Salt
- Pepper
- Parmesan cheese, grated
Saute onions and garlic in oil. Add bacon and cook for 5 minutes. Add thyme, basil, tomatoes, apple juice, water, and puree. Bring to boil and simmer about 1 hour. Add carrots and broccoli; cook until slightly tender. Add the pasta. Cook until tender. Salt and pepper to taste. Garnish with Parmesan cheese.
Serves: 8 to 10
