Minced meat curry with noodles recipe details
Ingredients
1 | red bell pepper |
1 bunch(es) | spring onions |
1 | onion |
1 piece(s) | ginger, hazelnut-sized |
1 clove(s) | garlic |
400 g | small pasta, e.g. Fusilli or Penne |
3 tbsp | oil |
250 g | minced meat |
1 tbsp | flour |
2 tsp | curry powder |
500 ml | vegetable stock |
50 g | cashew nuts |
5 tbsp | whipping cream |
salt and pepper | |
paprika powder |
Instructions
Clean and dice the bell pepper. Slice the spring onions and chop finely onion, ginger and garlic.Cook the pasta in boiling salted water until al dente.
Heat 2 tablespoons of oil in a frying pan. Add onions and sauté for 1-2 minutes. Add minced meat, bell pepper, garlic and ginger and stir fry for 2-3 minutes. Dust with flour and curry, stir for a minute and deglaze with the stock. Bring to a boil, stirring frequently and cook for approximately 5 minutes.
Meanwhile, heat a tablespoon of oil in a separate pan. Roast cashews, then add spring onions and stir-fry for about 1 minute. Pour cream into the meat sauce and season to taste with salt, pepper and paprika. Add spring onions and cashews to the sauce.
Drain the pasta and serve with the sauce.
