Minced meat and kohlrabi casserole recipe details
Ingredients
4 | kohlrabi approx. 500g each |
3 | onions |
3 tbsp | oil |
1 ½ kg | minced meat, beef and pork |
2 tsp | dried tarragon |
salt and pepper | |
3 tbsp | mustard |
60 g | butter |
80 g | flour |
1 l | milk |
ground nutmeg | |
2 | egg yolks |
200 g | grated cheese, e.g. Mozzarella |
paprika powder | |
½ bunch(es) | chopped parsley |
Instructions
Peel and wash the kohlrabi. Cut into ˝ cm slices. Cook the kohlrabi slices in lightly salted water for 5 minutes. Drain, chill with cold water and drain again.Dice the onions. Heat the oil and sauté the onions until lucent. Add the minced meat and season with salt, pepper and tarragon. Cook for approximately 5-7 minutes or until the liquid has evaporated. Stir in the mustard.
Preheat the oven to 200°C/ Gas Mark 3-4.
Melt the butter in a saucepan, add the flour and cook stirring until slightly yellow. Add the milk, stirring constantly. Bring the sauce to the boil and simmer for 5 minutes. Season to taste with salt, pepper and nutmeg. Remove the saucepan from heat. Mix the egg yolk with a little of the sauce, then add the mixture to the sauce and stir until well combined.
Lightly grease a casserole dish. Cover the bottom with 1/3 of the kohlrabi slices. Layer half of the minced meat on the kohlrabis. Cover with a second layer of kohlrabi, then with the remaining minced meat and arrange the last third of the kohlrabis on top. Pour the sauce over the casserole, sprinkle with cheese and paprika and bake in the preheated oven for 35-40 minutes.
Sprinkle with parsley and serve.
