Mike's hamburger rice casserole recipe details
I was looking for a recipe that would use some ingredients I had around the house. I couldn’t find one for a hamburger and rice casserole, so this is the result. It is tasty and easy enough to prepare.

Ingredients
Serves: 6- 1 cup uncooked thai jasmine rice
- 1 pound ground round
- 1/4 cup chopped onion
- 2 cloves minced garlic
- salt and pepper to taste
- 10 ounce bag frozen sliced carrots
- 3/4 cups frozen peas
- 1 (10.5 ounce) can cream of mushroom soup
- 1/2 cup milk
- 1/2 cup sour cream
- 1 cup shredded cheese (Mexican blend)
- 1 1/2 cups crushed Special K(R) cereal.
- oregano and basil to taste
Preparation method
Prep: 10 mins | Cook: 40 mins1. Start by cooking the rice in water. This takes about 15 minutes (or less in a rice cooker).
2. Preheat oven to 425 degrees F.
3. Midway through the rice cooking, in a large skillet over medium high heat – brown the hamburger with the onion, garlic, salt, and pepper. After cooking the hamburger done add the rice and stir. Add the carrots and peas, cook until just thawed. Add the cream of mushroom soup, milk, and sour cream and stir. Transfer to a 2.5 quart casserole dish. Top with cheese and crushed cereal. Sprinkle with basil and oregano.
4. Place in oven and cook for 20-25 minutes, until cheese is melted and the Special K starts to brown. Enjoy!
