Migas recipe details
- Ingredients
- 4 eggs
- 1 Tablespoon milk
- 2 to 3 drops of Tabascopepper sauce (optional)
- salt, pepper to taste
- 1 Tablespoon butter or margarine
- 1/3 to 1/2 cup grated cheddar or Monterey jack cheese
- 2 Tablespoons chopped green chilies
- 1/2 cup tortilla chips
- picante sauce (optional)
Migasis Spanish for “crumbs” because you crumble tortilla chips into eggs.
In a small bowl, beat together the eggs, milk, pepper sauce, salt, and pepper. Melt butter or margarine in a skillet over medium heat. Cook the eggs, stirring occasionally, until they are almost set. Add grated cheese and chiles, stir, and then quickly crumble the tortilla chips over eggs and stir them in just as they are setting. Serve alone or with picante sauce.
