Ingredients
1 large | spring onion or a small shallot, chopped finely |
1 clove(s) | garlic, small |
2 small | potatoes, cooked, leftovers |
3 strip(s) | red pepper, chopped |
1 rasher(s) | back bacon, fat removed and cut into pieces |
30 g | freshly grated Parmesan or Cheddar cheese |
2 | mushrooms, sliced |
1 large | egg |
Instructions
Chop up the onions and garlic, if used. Microwave with the red pepper, sliced mushrooms, and bacon for 3 minutes on high, in an open microwaveable pot, with the lid off.Add the potatoes, cut into cubes, and microwave for 1 minute on high, open. Remove from the microwave, sprinkle on the cheese, salt and pepper to taste. Break the egg(s) over the mixture and scramble with a fork. Put the lid on and microwave for 1 ½ to 2 minutes on medium, until set.
Turn out onto a plate or onto a piece of toast. Serve with tomato and sprig of parsley or watercress.
Variation:
Slice the tomato and cook on top of egg mixture, takes about 1 minute longer.
