Mexicana quiche recipe details
- Ingredients
- 5 eggs
- 2 Tablespoons butter, melted
- 1/4 cup flour
- 1/2 teaspoon baking powder
- One 8-ounce carton cottage cheese
- 2 cups shredded Monterey Jack cheese
- One 4-ounce can of green chiles, chopped
- 1 tomato, sliced
- Sour cream and salsa
Combine eggs, butter, flour, and baking powder. Mix well. Add cottage cheese, Monterey Jack, and chiles to egg mixture. Pour into a well-greased quiche pan. Bake in 400 degree oven 10 minutes. Arrange sliced tomato on top, return to oven and reduce temperature to 350 degrees and bake another 20 minutes. Serve with sour cream and salsa.
