Mexican eggs recipe details
- Ingredients
- Per serving
- 1 flour tortilla (7-8 inches)
- 2 eggs
- 1 Tablespoon chopped green onion
- 1 Tablespoon chopped tomato
- 1 Tablespoon chopped green chili
- 1/4 cup shredded cheese (Cheddar, Monterey Jack, etc.)
- Salsa and sour cream for garnish
Heat tortilla in microwave till warm (20-30 seconds).
Scramble eggs.
Place warm tortilla on ungreased cookie sheet. Top with eggs, onions, tomatoes, chilies and cheese.
Bake at 350 degrees F for 5-10 minutes or until very warm and cheese has melted. Top with salsa and sour cream.
