An easy weeknight dinner–you cook chicken, chuck it in a baking dish with tasty Mexican flavors (plus some baby spinach to get closer to those USDA eating guidelines), and 25 minutes later you’ve got a flavorful, piping hot plateful of food.

Ingredients
Serves: 4- 1 tablespoon olive oil
- 1 pound chicken cutlets
- Salt and pepper
- 1 1/2 cups salsa verde
- 3/4 cup ricotta cheese
- 4 large flour tortillas, cut into wedges
- 1/2 red onion, thinly sliced
- 3 cups baby spinach
- 2 cups shredded pepper Jack cheese
Preparation method
Prep: 20 mins | Cook: 20 mins1. Preheat oven to 450 degrees F and coat a 9×9-inch baking dish with nonstick cooking spray.
2. Pour olive oil into a skillet and set over medium-high heat. Cook chicken in hot oil, sprinkling with salt and pepper, for about 5 minutes until meat is no longer pink inside. Remove from skillet and shred.
3. In a bowl, stir salsa together with ricotta cheese, adding salt and pepper to taste.
4. Line the baking dish with a third of the tortilla wedges. Top with a third of the salsa, chicken, onion, spinach, and cheese. Repeat until ingredients are used up, ending with cheese.
5. Bake for about 20 minutes to heat through, then remove from oven, let rest for 5 minutes, and serve.
