These easy ground chicken meatballs get extra taste from a cheese and salsa sauce. Serve at your football party and watch them disappear.

Ingredients
Makes: 60 meatballs- 2 eggs, lightly beaten
- 1 (4 ounce) can chopped green chiles
- 1 cup crushed cornflakes
- 1 cup shredded Mexican cheese blend
- 1/2 teaspoon seasoned salt
- 1/4 teaspoon cayenne pepper
- 1 pound ground chicken
- 1/2 pound Velveeta cheese
- 3/4 cup salsa
Preparation method
Prep: 20 mins | Cook: 12 mins1. Preheat oven to 375 degrees F and coat two or three baking sheets with nonstick cooking spray.
2. Gently mix eggs, green chiles, cornflakes, cheese, salt, cayenne, and chicken in a bowl. Form into 5 dozen meatballs, one inch across.
3. Arrange meatballs on prepared baking sheets. Bake for 12 to 15 minutes, until meat is cooked through, flipping meatballs after 6 minutes of cooking time.
4. While meatballs are cooking, melt Velveeta in a saucepan over medium heat. Stir in salsa.
5. Serve meatballs with cheesy salsa sauce.
