These sweet and fluffy buns are characterized by their unique shell-like pattern on the top, which gives them their name. With a soft and buttery texture, Mexican buns are perfect for breakfast or as an afternoon treat with a cup of coffee or hot chocolate. They are often enjoyed plain, but can also be filled with sweet fillings like custard or fruit jam. Some popular variations include chocolate, vanilla, and strawberry flavors.

Mexican buns details
INGREDIENTS:Bread dough:
400g Basic Sweet Bread Dough
Filling:
50g salted butter
Mexican Skin:
50g butter (melted)
50g high ratio flour (sifted)
40g icing sugar (sifted)
1/2 egg (lightly beaten)
METHOD:
- Divide dough into 50g balls and rest them for 5 minutes before going on to shaping.
- On a lightly floured surface, use a rolling pin to roll out a dough. Spread some butter on it . Join the edges to form a ball. Place the dough on a baking tray .
- Cover the dough with a damp tea towel and leave to rise for 30-40 minutes until double in size.
- To prepare the Mexican skin, add sifted icing sugar into melted butter. Mix well. Add in egg followed by sifted flour. Mix well to form a creamy mixture.
- Fill a piping bag with mixture prepared in (4). When the buns have completed the second rise, pipe mixture onto the buns .
- Bake the buns in a preheated oven at 180 degC for 30 minutes. When done, leave the buns on a wire rack to cool .
NOTES:
- Start baking with upper and lower heat. When the top of the buns have become brownish, turn the heat source to lower only. As We always say, heating characteristic of every oven varies. You have to adjust the temperature, heat direction and cooking time of your oven accordingly.
- Avoid using too much flour on your working surface as this will cause relative tough and crusty surface in the product.
