Mexicali eggs recipe details
- Ingredients:
- 8 eggs, beaten
- 1 cup Bisquick baking mix
- 1 stick butter, melted
- 1 to 2 teaspoons Mrs. Dash seasoning
- 16 ounces cottage cheese
- 8 ounces shredded cheddar cheese
- 1 cup milk
- One 11-ounce can Mexicorn
- salsa
- sour cream
- sprig of cilantro
Preheat oven to 350 degrees. Mix all ingredients together, except salsa, sour cream, and cilantro. Pour into a greased 9 x 13-inch pan. Bake for 50 minutes to 1 hour.
Remove from oven; allow 5 minutes to set up. Cut into squares. Top with salsa, a dollop of sour cream and a sprig of cilantro.
