Ingredients

1 ½ tsp | vanilla extract |
½ tsp | cream of tartar |
1 ½ tbsp | cornstarch |
180 g | granulated sugar |
6 large | eggs, whites only |

Instructions
Preheat oven to 150°C. Line a large baking sheet with parchment paper.Pour the vanilla into a small cup and set aside.
Combine the cornstarch with the sugar in a small bowl and set aside.
In another large bowl combine the egg whites, cream of tartar and salt. Whisk until soft peaks start to become visible, approximately 2 to 3 minutes.
Gradually sprinkle in in the sugar-cornstarch mixture while whisking. Add in the vanilla and increase the speed and whip until meringue is glossy, and stiff peaks form when the whisk is lifted, 4 to 5 minutes.
Spoon the meringue into 8 large round mounds that are about 7cm wide on a baking sheet lined with parchment paper. With the back of a spoon, indent the middle of the mound for holding the filling once meringue is baked.
Place baking sheet in the oven and reduce oven temperature to 120°C. Bake for 50-60 minutes, or until the meringues are crisp, dry to the touch on the outside, and still white. The interiors should have a marshmallow-like consistency.
Gently lift from the baking sheet and leave to cool.
To serve top with your favourite filling: lemon curd, raspberry sauce, blueberry sauce, and freshly whipped cream.
