I grew up eating this fabulous healthy soup.It’s great after you’ve been eating rich foods and need to let your body rest.I make this and eat it all weekend and actually lose a little weight.

Ingredients
Serves: 8- 12 cups water
- 1 pound beef bones or 1/2 pound stew meat
- 1 onion, chopped
- 5 carrots, chopped, divided
- 1 whole dried chile pepper
- 2 teaspoons salt, divided
- 1 small cabbage, chopped
- 1 green pepper, chopped
- 2 potatoes, chopped
- 1 can diced tomatoes
- 1 bay leaf
- 2 pieces celery, chopped
- 2 tablespoons tomato paste
- 2 cloves garlic
- 1/2 teaspoon freshly ground pepper
- 6 tablespoons chopped fresh dill
Preparation method
Prep: 30 mins | Cook: 3 hours | Extra time: 10 mins1. Boil bones in water for 2 hours with onion, 2 carrots, chile pepper, 1 teaspoon salt and strain.
2. Add chopped cabbage, green pepper, potato, tomatoes, bay leaf and simmer for 1/2 hour.
3. Add rest of ingredients and simmer for another 20 minutes.
