Ingredients

port wine | |

Instructions
Halve the cantaloupe and scrape away seeds and fibres of both melons.For the salad:
Scoop small balls out of the flesh of the honeydew melon and half a cantaloupe, to get a nice whitish and pinkish mix. Season the melon balls with a dash of port wine, a pinch of ginger and pepper and allow to marinate for approximately 10 minutes.
Arrange the melon salad in a scratched out melon shell and serve decorated with rosettes of Parma ham.
For the soup:
Scrape out the remaining flesh from the melon shells. Purée with a hand blender, adding a dash of port wine, a pinch of ginger and a pinch of pepper. Fry two slices of ham in a pan until golden and crispy. Pour the soup into small iced glasses and serve sprinkled with the fried ham.
For the melon boats:
Cut the remaining cantaloupe into wedges. Carefully cut the flesh from the shell, but leave it on the shell and cut it into bite-sized pieces. Wrap ham around Grissini bread-sticks and serve together with the melon boats.
