Blueberry Mayonnaise recipe

|2 large||eggs, 1 yolk|
|2 tsp||Dijon mustard|
|60 ml||blueberry vinegar|
|300 ml||olive oil|
|salt and pepper, to taste|
Place egg, additional egg yolk, Dijon mustard, blueberry vinegar, salt, and pepper in a blender and process until well combined. Add olive oil and blend for a couple more seconds.
Store in an airtight glass container in the refrigerator.
