Medium rare loin of lamb with a herb sauce recipe details
Ingredients
800 g | lamb loin, off the bone, trimmed |
1 bunch(es) | parsley, roughly chopped |
½ bunch(es) | coriander, roughly chopped |
3 sprig(s) | mint |
olive oil | |
salt and pepper | |
3 clove(s) | garlic, peeled |
Instructions
Preheat the oven to 80°C, fan on.Season the meat with salt and pepper. Heat oil in a skillet and fry the meat over high heat until browned all around. Transfer into the oven and leave there for 10-15 minutes.
Put the herbs with garlic into a blender, add oil and process until smooth. Season to taste with salt and pepper.
Spread some of the herb sauce onto each plate. Carve the meat into 3cm slices and arrange them on the herb sauce. Serve with a mixed lettuce salad and fresh white bread.
