Mediterranean style stuffed bell peppers recipe details
Ingredients
8 | bell peppers, cleaned and tops cut off |
salt and pepper | |
100 g | green olives, pitted and chopped |
100 g | black olives, pitted and chopped |
1 bunch(es) | spring onions, chopped |
200 g | goat’s cheese, crumbled |
200 g | rice |
2 clove(s) | garlic, chopped |
2 tbsp | oil |
2 tbsp | tomato puree |

oregano | |
2 | onions, chopped |
1 can(s) | peeled tomatoes |
Instructions
Cook the rice in salted water until nearly done. Mix the rice with olives, spring onions and the cheese. Season to taste with salt and pepper. Stuff the peppers with the rice mixture.In a pan, heat the oil. Sauté onions and garlic until lucent. Add the tomato purée and stir-fry for a minute. Deglaze with 150 ml of water and the tomatoes. Bring to a boil. Season to taste with salt, pepper, sugar and oregano.
Preheat the oven to 200°C.
Arrange the peppers with the sauce in a casserole dish. Cover and bake for 20 minutes. Uncover and bake for another 20 minutes.
