Boneless chicken breasts stuffed with feta cheese and spinach for a great Mediterranean taste!

- 3 cups fresh baby spinach
- 1 clove garlic
- 2 tsp. olive oil
- 4 boneless skinless chicken breasts
- 1/4 cup crumbled feta cheese
- 1/2 lemon, zested
- 1 tsp. pepper (to taste)
- 1/2 tsp. oregano
- Parsley (chopped, optional)
- Additional crumbled feta
Preparation methodPrep: 15 mins | Cook: 25 mins
1. Preheat oven to 400 degrees F (190 degrees C).
2. In saucepan, cook spinach and garlic in olive oil until spinach is tender, set aside.
3. Place chicken breasts between two pieces of plastic wrap. Pound with mallet to 1/4 in. Remove plastic wrap.
4. Spoon a quarter of the cooked spinach down the center of each breast and top with 1 tablespoon of feta. Fold long sides in, and roll up from the short end. Secure with wooden toothpicks.
5. Coat chicken with olive oil, zest the lemon, and sprinkle a dash of pepper and the oregano.
6. Transfer chicken to a shallow baking dish. Bake chicken 20 minutes, or until no longer pink. Top with parsley and crumbled feta, if desired.
