Mediterranean rice stuffed bell peppers recipe details
Ingredients
8 | bell peppers, tops cut off, seeds removed |
50 g | green olives, pitted and chopped |
50 g | black olives, pitted and chopped |
½ bunch(es) | spring onions, sliced |
150 g | Feta cheese, crumbled |
2 | onions, chopped |
1 can(s) | tomatoes |
400 g | cooked rice |
salt and freshly ground black pepper | |
2 clove(s) | garlic, chopped |
2 tbsp | olive oil |
2 tbsp | tomato puree |
sugar | |
oregano |
Instructions
In a bowl, combine the rice with Feta cheese, olives and the spring onions. Season with pepper. Stuff the bell peppers with the mixture.In a wide saucepan, heat the oil. Sauté the onion and the garlic until lucent. Add the tomato purée and cook stirring for 1-2 minutes. Pour in 150 ml water and the tomatoes and bring to a boil. Season to taste with salt, pepper, sugar and oregano.
Place the stuffed peppers side by side into the saucepan, cover and cook for 25-30 minutes.
