Mediterranean potato bake recipe details
Ingredients
1 kg | potatoes, cooked, peeled and cut in 2cm cubes |
30 g | extra virgin olive oil |
250 g | tomatoes, diced |
2 clove(s) | garlic, minced |
2 sprig(s) | thyme, chopped leaves |
2 sprig(s) | rosemary, chopped leaves |
2 sprig(s) | majoram, chopped leaves |
salt and freshly ground black pepper, to taste |
Instructions
Preheat the oven to 200°C.Combine potatoes, tomatoes, garlic, herbs and olive oil in a casserole dish and toss until all is well combined and coated with oil. Season to taste with salt and pepper.
Place into the oven and bake for 20-30 minutes.
