This meat-powered, flavor-packed chili is a bit of a project. But the slow cooker does most of the work. Inspired by MITCHHARRIS’s “Mitch’s Mighty Meaty Chili.”

Ingredients
Serves: 12- 1 pound thick-cut bacon
- 1 pound kielbasa, casing removed and sausage thinly sliced
- 2 pounds ground turkey
- 1 (28 ounce) can diced tomatoes with juice
- 3 (15 ounce) cans chili beans, drained
- 1 (15 ounce) can chili beans in spicy sauce
- 1 (6 ounce) can tomato paste
- 1 large yellow onion, chopped
- 3 stalks celery, chopped
- 2 green bell peppers, seeded and chopped
- 3 Hungarian peppers, seeded and chopped
- 1 (15 ounce) can beef broth
- 1 (12 ounce) bottle beer
- 1 cup strong brewed coffee
- 1/2 cup packed brown sugar
- 1/4 cup chili powder
- 1 tablespoon Worcestershire sauce
- 1 tablespoon minced garlic
- 1 tablespoon dried oregano
- 1 tablespoon unsweetened cocoa powder
- 2 teaspoons hot pepper sauce
- 2 teaspoons ground cumin
- 1 teaspoon dried basil
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1 teaspoon cayenne pepper
- 1 teaspoon ground coriander
Preparation method
Prep: 45 mins | Cook: 8 hours1. Put a large skillet over medium heat. Add the bacon and cook until very crispy, turning once. Place bacon on paper towel to cool. Keep the drippings in the pan.
2. Add kielbasa to the skillet and cook in the bacon drippings for 5 minutes. Remove and place on plate with bacon. Cook turkey in the remaining pan drippings, then remove to plate with other meats.
3. Add all vegetables to the skillet and cook until tender, about 10 minutes. Take off heat and crumble the bacon, which should be cool by now. Then transfer the veggies with all pan drippings, and the plate of meats, to a 6-quart (or larger) slow cooker.
4. Cover and cook on LOW for 8 to 10 hours.Tip
To thicken the chili, combine 2 tablespoons of cornstarch and 2 tablespoons of cold water in a small bowl. Slowly stir cornstarch mixture into stew with slow cooker set to HIGH, then repeat until desired thickness is reached.
