Meatballs with kohlrabi recipe details
Ingredients
1 | bread roll, soaked in water and squeezed out |
2 | onions, chopped |
salt and freshly ground black pepper | |
500 g | beef mince |
1 | egg |
800 g | kohlrabi, peeled and diced |
750 g | potatoes, peeled and sliced |
200 ml | milk |
3 sprig(s) | parsley, chopped |
1 tsp | dried marjoram |
2 tsp | mustard |
500 ml | vegetable stock |
2 tbsp | oil |
1 tbsp | butter |
1 tbsp | flour |
Instructions
Mix the minced meat with the squeezed out bread, half of the onions, egg and mustard. Season with salt and pepper. Knead until well combined then shape to small meatballs.Bring the stock to a boil. Add the kohlrabi, cover and cook until done, but still a bit firm to the bite. Cook the potatoes in salted water until done.
In a pan heat the oil and fry the meatballs until brown and crispy all around. Drain the kohlrabi and collect the stock.
In a saucepan melt the butter and sauté the remaining onion until lucent. Dust with the flour and cook until pale yellow. Whisk in the milk and 300 ml of the stock. Cook stirring for 5-7 minutes. If too thick, add more stock. Season to taste with salt and pepper.
Drain the potatoes and sprinkle with the parsley. Heat the kohlrabi in the sauce and season with marjoram. Serve the meatballs with the kohlrabi and the potatoes.
