Ingredients
For the meat loaf: | |
500 g | minced meat |
3 tbsp | breadcrumbs |
1 | egg |
1 clove(s) | garlic, finely chopped |
2 | onions, diced |
2 tbsp | bacon, diced |
2 tsp | mustard |
1 tbsp | parsley, chopped |
4 | hard boiled eggs, peeled |
200 ml | vegetable stock |
100 ml | single cream |
For the carrots: | |
500 g | carrots |
1 | onion |
1 tbsp | butter |
pinch(es) | sugar |
For the spaetzle: | |
3 | eggs |
60 ml | water |
300 g | flour |
nutmeg | |
salt and pepper | |
butter |
Instructions
In a bowl, combine the minced meat, breadcrumbs, egg, garlic, onions, bacon, mustard, salt and pepper. Roll out half of the mixture. Top with the hard boiled eggs and cover with the remaining mixture. Shape with wet hands to a loaf.Transfer the loaf into a roasting tin and bake at 180°C for 40-50 minutes. Pour the stock into the tin, loosen the good things from the bottom and boil down a bit. Stir in the cream.
Whisk the eggs, add the water, flour and salt and stir until smooth. The consistency of the batter should be so, that it falls heavy from a spoon. Allow to stand for 15 minutes.
Bring salted water to a boil. Spread always a thin layer of the batter onto a wooden chopping board and scrape stripes of the batter into the boiling water. When the “spaetzle” rise to the surface, remove from the water with a slotted spoon and turn them in hot butter. Go on until all is used up.
Peel and slice the carrots. Chop the onions. In a saucepan, sauté the onion in butter until lucent. Add the carrots and add water just to cover. Cook until tender, but still a bit firm to the bite. Season to taste with salt and sugar.
Serve the meat loaf together with the sauce, the spaetzle and the carrots.
