An easy way to cook winter squash in the microwave, and a good vigorous mash that’s a nice workout for your forearms. Season with salt and pepper (or fresh herbs, if you happen to have some lying around) and you’ve got a quick vegetable side dish.

Ingredients
Serves: 4- 4 cups peeled squash, cubed
- 2 tablespoons water
- 1/2 cup chicken broth
- Salt and pepper, to taste
Preparation method
Prep: 10 mins | Cook: 10 mins1. Place squash in a microwave-safe bowl and cover with plastic wrap. Microwave on High for 10 to 12 minutes, or until soft.
2. Add chicken broth and mash with a potato masher or hand-held electric blender. Season to taste with salt and pepper. Serve.
