Mashed Potatoes with Bacon and Cheese recipe

|400 g||smoked bacon|
|180 ml||sour cream|
|250 g||Cheddar cheese, grated|
|salt and fresh ground pepper to taste|
Cook bacon until crispy. Drain on paper towels. When cooled and dry crumble into small pieces.
Cut potatoes into cubes and cook until tender. Drain; with a fork mash potatoes until there are no lumps. Add sour cream, butter and season with salt and pepper. Continue mashing until smooth and creamy.
Fold in cheese and bacon. Transfer to a large bowl and serve.
