Mashed kohlrabi and red potato bake recipe details
Ingredients
1 bulb(s) | kohlrabi, peeled, cubed |
6 small | red potatoes, unpeeled |
2 clove(s) | garlic, minced |
120 g | mozzarella cheese, grated |
Instructions
Preheat oven to 170°C. Coat a 1 litre casserole baking dish with nonstick cooking spray.Bring a pot of water to boil over medium heat. Add kohlrabi and cook until tender, about 10 minutes. Drain.
In another pot boil potatoes until soft. Then chop.
In a mixing bowl, combine chopped potatoes, chopped kohlrabi, and minced garlic. Mash with a fork and stir until combined.
Pour mashed mixture into baking dish, then top with cheese.
Bake for 20 minutes, until cheese is melted and vegetables are heated through.
