Mascarpone with walnuts and mango recipe details
Ingredients
2 | egg yolks |
40 g | sugar |
2 tbsp | vanilla sugar |
80 ml | orange juice |
1 tbsp | orange zest |
2 leaves | gelatin |
100 g | walnuts |
300 g | mascarpone |
200 g | single cream |
2 | ripe mangos |
Instructions
Over a bain-marie whisk the egg yolks with the sugar, vanilla sugar, half of the orange juice and the orange zest until thickening. Soak the gelatin in cold water, squeeze out and dissolve in the remaining slightly heated orange juice. Mix some of the egg yolk mixture with the gelatin, then stir the gelatin mixture completely into the egg yolk mixture. Allow to cool slightly.Chop the walnuts. Whisk the single cream until stiff. Combine the mascarpone with the walnuts and the whipped cream then fold in the egg mixture. Cover and allow to set in the fridge for at least 2 hours or overnight.
Peel the mango, then cut off thin strips of the flesh around the stone. Arrange the mango strips star-shaped on 4 plates. Scoop out of the mascarpone mousse egg-shaped quenelles and place one in the middle of each plate.
Note:
You may substitute pears for the mangos.
